It’s been a great weekend! We ended the juice cleanse and did a 30-mile bike ride on Friday! My first of the year and I haven’t been able to do much riding. The juice cleanse did wonders for my body. I would not have been able to do a 30 miler have I not been doing the cleanse, let alone do it while I was still juicing.
We had our first full day of eating Keto on Saturday. We had a full day of incredible food! For breakfast, I made the choco-maca milkshake. The milkshake is so delicious, but with all the heavy fats in it, it was hard on our tummies at the end of a juice cleanse.
To get back on track I made Cucumber Gazpacho and added some mint from our garden. The gazpacho was so good, I bought more English Cucumbers to make a double batch today for the week. It’s a really great choice for a hot day and your tummy in need of digestion assistance!
I made the Chili Garlic Cauliflower Lettuce Wraps for dinner, another amazing recipe. I added sprouts and chopped walnuts to the filling as well. I’m going to make them again today since I still have some butter lettuce. I’m thinking of roasting some crimini mushrooms with the cauliflower, yum!
Our adventure for today was to drive up to Grizzly Peak Trailhead and walk up to the top of the mountain. Starting at 5,170 ft in we walked up the 750 elevation gain to the top! The trial has a loop that we didn’t do thank goodness. We took our time and took lots of pictures.
It was our first time going there and didn’t know what to expect. We had brought breakfast with us (Raw-Nola with homemade almond milk and a veggie juice) but didn’t bring it with us. We thought it was only a short distance to get to the view, it was however a really long hike up the mountain and back. Good thing, I brought my coffee with me…lol!
OK, let’s get up to date on dinner! I was so full after lunch (so good veggie sandwich) that I went with something that was easy to make and light on the digestion. That is the one thing about Keto is teaching your body to use fat as fuel rather than carbs so you are eating a lot more healthy fat than your digestion is used to. I took an enzyme with lunch and will have a probiotic tonight. So yes, dinner Warm Spinach Salad with a bit of avocado.
That is the weekend. Update on health: 1. My partner Gary who has Post Concussion Syndrome is noticing an improvement in brain symptom triggers. 2. I was able to do a 30-mile bike ride and walk up a mountain. The pain in my body is a lot better, still room for improvement. I don’t know what my weight was when I started the juice cleanse, I’m feeling I was over 200lbs though. I weighed myself yesterday and I was 192lbs. Way more than I should be for my height and hoping to lose a lot more.
