MAMA’S CHOCOLATE CAKE

 

BAKE YELLOW CAKE MIX (ANY BRAND) ACCORDING TO PACKAGE DIRECTIONS.   LEAVE CAKE IN PAN, PUNCH HOLES IN CAKE WITH FORK. SCRAPE THE TOP OF THE CAKE OFF BEFORE PUTTING ON ICING.
PREPARE CHOCOLATE COFFEE ICING:
3 CUPS SUGAR

1 1/2 CUP DRIPPED COFFEE

3 HEAPING TBLS COCOA

1/4 TSP SALT

MIX ABOVE INGREDIENTS IN SAUCE PAN. BRING TO ROLLING BOIL, STIRRING CONTINUOUSLY UNTIL LIQUID BEGINS TO THICKEN..TEST BY DIPPING WITH SPOON AND LETTING IT DRIP.  WHEN IT DRIPS SLOWLY FROM SPOON, BOIL A COUPLE MORE MINUTES.

PLACE ONE (1) STICK OF BUTTER OR MARGARINE AND 1 TSP VANILLA FLAVORING INTO ICING.  STIR UNTIL BUTTER IS COMPLETELY MELTED..

POUR OVER CAKE IMMEDIATELY.

CAKE WILL BE VERY MOIST AND WONDERFUL!
