Freda’s Coconut Pound Cake

Coconut Pound Cake (glaze recipe to follow)

1 cup crisco

2 cups sugar

3 cups plain flour

4 eggs

1 cup buttermilk

1/2 tsp salt

1/2 tsp soda

1/2 tsp baking powder

3 tsp coconut flavoring

1/4 tsp almond flavoring

Cream shortening and sugar.  Sift dry ingredients EXCEPT SODA.  Mix soda and buttermilk.  Add milk and dry ingredients alternately.  Add eggs one at a time.  Beat well after each addition.  Add flavorings. 

Bake at 350 degrees for 1 hour or until done. Prepare glaze while cake is still hot, or just prior to taking cake out of oven.  Do not remove cake from pan because glaze goes on cake while it is in pan.

Glaze for Coconut Pound Cake

1 cup sugar

2 TBS white Karo Syrup

1/2 cup water

1/2 stick butter

Cook 5 minutes and add 1 tsp coconut flavoring.

Leave cake in pan and pour glaze over it immediately after removing from oven.  Let set in pan about 30 minutes till cool.
